Meet the Chefs

2020 Opportunity Tailgate chefs celebrate a job well done! 

Chef Michael Olivas, the defending Opportunity Tailgate Champion!

Champion! Chef Michael has always loved and had in interest in food. At age 12, he began working in his aunt’s restaurant at the Hotel Limpia Dining room. By 14, he was trained and shaped by chefs on the line and soon took a lead role in the kitchen. In 2003, Michael graduated from Fort Davis and moved to the Rio Grande Valley to study culinary arts. He received his Associates Degree in Culinary Arts in 2005 and went to work at H-E-B as the Department Manager for the Cooking Connection. In 2013, he launched his own business, Exquisite Catering, and has had the pleasure of catering all kinds of small and large events as well as destination weddings. 

Chef Kim Herard

Chef Kim Herard has always loved to cook. After graduating from Lee High School in 2004, she was accepted into Le Cordon Blue’s Texas Culinary Academy in Austin with her major being Patisserie and Baking. In 2007, she opened Midnight Munchies food truck and in 2009, after many hours in the oilfield, she began Indulgence Catering and Events. In 2019, she moved into her current 8,500’ space at 4906 Briarwood Avenue. Her diner is named after her grandmother, Gloria, who taught her how to cook delicious, southern comfort food. 

Chef Johnathan

Chef Johnathan’s parents, Mr. and Mrs. Rudolpho Lopez, began Fajitas Bravo in 1988. They cooked at special events like The Old Sorehead Trade Days, Permian Basin Fair, Midland Menudo cook off—basically any event you could attend Fajitas Bravo was sure to be there. At age 7, Chef Johnathan began flipping tortillas with his parents. In 2008, he took over the family brand by continuing to serve all of West Texas. In 2020, the food truck began and you can find them all over Midland. 

Chef Alejandro Barrientos

Chef Alejandro Barrientos loves to cook and lets his food do the talking for him. He also loves Instagram and you can find all kinds of savory treats here:

Being on the show, “Beat Bobby Flay” was a dream come true for Chef Alejandro. 

Chef Aaron Lesley

Chef Aaron Lesley, founder of Texas Oil Dust, is a last minute substitution for Johnny Vandergriff. Aaron is a BBQ pit master at Midland Meat Company and is ranked in the top 20 in America. Known for his seasonings (aka, Texas Oil Dust), Aaron has been smoking, grilling and catering for 11 years and competing in BBQ competitions for the past 6 years. Aaron will be competing for the national championship later this year. He loves spreading the love of wagyu beef through Midland Meat Company and representing the Scharbauer family as much as possible. You can find him cooking locally at the 1/2 Acre Restaurant at 1101 Washita, Midland, TX 79705.


Since 2002, Opportunity Tribe has been helping great kids succeed through Op Camp. For over 19 years, the United Way of Midland has been generous supporters of Op Camp because they SEE THE RESULTS. Kids come back from camp happier, more confident and ready to take on their challenges. Not only that, but EVERY PUBLIC SCHOOL has sent kids to Op Camp!
